A long time ago I realised collecting memories instead of things was a lot more important to me. People say we are the sum of our experiences, and for me, delicious food is part of the experience, wherever I go.
A few weeks ago, I attended a Matched Cake and Tea Degustation hosted by Amber Hudson, owner of T Totaler. I can’t tell you enough how much I enjoyed the class. I am very passionate about tea, and T Totaler matched cake and tea degustation definitely adds to the list of the wonderful tea experiences I have had in the past, such as making real Moroccan tea in Marrakesh and visiting a tea plantation in Kenya.
If you have not heard of T Totaler before, it’s a trendy tea house located in Newtown, Sydney, where you can find specially blended products to provide a balance between taste, smell and nutrition.
The Matched Cake and Tea Degustation Menu
1. Immune Boost – sparkling ice tea / Served with Lemon Sherbet Meringue
Australian grown herbal blend of echinacea, olive leaf, rosehip, aniseed myrtle and calendula to help fight off the unwanted cold.
Mademoiselle Slimalicious’ verdict: I loved the sparkling tea! What a clever idea. It is served in champagne glasses and does look like sparkling wine. The flavour is subtle, refreshing and delicate.
2. French Earl Grey / Served with Turkish Delight, Almond and Rose Cake
A fragrant and refined China Black Tea with roses, blue corn, marigold, hibiscus and bergamot.
Mademoiselle Slimalicious’ verdict: My favourite blend on the menu (I bought myself a full jar). In my opinion, this was the best course of the day. The rose flavoured cake and the French earl grey is a match made in even.
3. Chai Yoga – cold drip / Served with Honey Ginger Cake and Salted Caramel Popcorn
Slow infusion of cardamon, cloves, ginger and cinnamon.
Mademoiselle Slimalicious’ verdict: I loved the presentation of this course. The cold drip chai tea is served on ice in a scotch glass. I don’t usually drink chai tea because I don’t like dairy or sweetener in my tea. This cold flavoursome tea hit the spot! Second favourite course of the day.
4. Organic English Breakfast Tea / Served with Bitter Chocolate and Lime Brownie
A traditional blend of Organic and biodynamic Sri Lanka Assam and Ceylon Black Tea.
Mademoiselle Slimalicious’ verdict: The rich chocolate brownie balanced the bitterness of the tea.
5. Coconut and Lemon Splice / Served with Matcha Green Tea and Coconut ice-cream sandwich
Australia grown Sencha, native lemon myrtle and coconut.
Mademoiselle Slimalicious’ verdict: An interesting course, the matcha ice-cream is well balanced but I would have liked to taste a little more coconut flavour in the tea.
6. After Dinner Mint / Served with a square of Dark Salted Chocolate
Refreshingly sweet herbal blend of Australian grown peppermint, aniseed, myrtle and liquorice root.
