Iles Flottantes is a common French dessert you’ll find on the menu of many French restaurants in France (other popular French dessert of choice on French restaurants menu, in France, generally include Mousse au Chocolat, Creme Brulee and Tarte aux Pommes). Iles Flottantes (floating Islands) consists of Oeufs a la neige (soft poached meringue) floatting on Creme Anglaise (runny vanilla custard), often topped with caramel and silvered almonds. It is a spectacular looking dessert yet very simple to make especially using a thermo food processor like Tefal Cuisine Companion. It is ready in minutes and the hardest part is to leave it cool in the fridge!
This Iles Flottantes recipe is inspired from the ‘Floatting Islands’ Tefal Cuisine Companion 1 Million Menus, Recipe N# 237.
- 6 fresh farm eggs
- 160g caster sugar
- 500 ml whole milk
- 1 tsp vanilla extract
- Separate the egg whites from the yolks. Place the yolks and 80 g of sugar in the bowl fitted with the whisk. Mix at speed 6 for 1 min. After 30 seconds, add the milk and vanilla.
- Launch the dessert program at 85°C at speed 4 for 12 mins. Set aside the custard and wash the bowl.
- Place the egg whites and remaining sugar in the dry bowl fitted with the whisk. Turn the Cuisine Companion on at speed 7 at 70°C for 6 mins 30 seconds, without the stopper. When finished, shape your egg whites and drain on kitchen paper.
- Share the custard among the glasses and add the cooked whipped up egg whites. Serve chilled.
