Autumn is knocking, the leaves are falling. The Australian autumn starts on March 1 and ends on May 31. The transition from summer to winter has some beautiful things about it, including delicious seasonal produces such a pears, aubergines (eggplants) and beans. Grey clouds and crisp wind make us crave our favourite comfort foods. I prepared for you a delicious 3 course seasonal menu to celebrate Autumn in style!
1. Aubergine Bake
Vegetarian bakes make for a great healthy side dish. Aubergine (eggplant) is France’s most liked vegetables and a key ingredient in numerous French vegetarian traditional dishes such as ratatouille and tian provencal.
2. Chorizo and Butter Beans Casserole
Autumn calls for slow cooked dishes, oven roasted meat and comfort food. This casserole recipe is fast and easy to prepare, delicious yet low in calories. The Spanish chorizo adds texture to the dish while the butter beans load it with protein.
